Ripe veggies

Got veggies that are getting too ripe or about to go bad? Roast them!
I started with a bunch of roma tomatoes, a couple of yellow squash and a head of garlic and bought 2 zucchini and a package of sliced mushrooms. After chopping everything up, I mixed in extra virgin olive oil, sea salt and pepper and spread the veggies out on a cookie sheet. Roasted them at 425 degrees until they were brown and crunchy, about an hour, added it to pasta tossed in a small amount (1 tsp) of olive oil and topped with shaved Parmesan cheese. Yum!
